Abstract: Kiwifruits were treated with calcium at postharvest preiod. The changes of ethylene production, respiratory rate and peroxidase (POD) activity of fruits were determined in order to find out an optimum calcium concentration to delay the ripening and decaying of kiwifruits. 2% calcium treatment was found to be able to inhibit ethylene production, respiratory rate and POD activity, and thus delayed the decay of fruits.

Key words: Kiwifruit (Actinidia chinensis), Calcium treatment, Peroxidase, Respiratory rate, Ethylene
