Red pigment from Syzygium grijsii fruit and its properties

轮叶蒲桃果实红色素提取与基本性质分析

Abstract: The physical and chemical properties of red pigment from Syzygium grijsii, as well as the effects of light, temperature, pH value, oxide-reducing medium on pigment stability were studied and analyzed. The results showed that the procedure of acid-alcohol extraction gave rather satisfied results. The pigment belongs to water-solvent anthocyanins with high content, and is stable below 80℃, but its resistance to oxide and reduction are not good.

摘要: 探讨轮叶蒲桃果实红色素的最佳提取剂,定量定性分析光、温度、氧化还原介质对该色素稳定性的影响。结果表明,轮叶蒲桃果实色素最佳提取剂为酸性乙醇,属花色苷类色素。室内自然光对色素影响不大,该色素在80℃以下较稳定,对氧化剂、还原剂反应敏感。
